This recipe uses the All-Purpose Baking Mix (here) to make basic, flaky biscuits that are loaded with cheesy goodness. Eat them hot, spread with butter or honey, for a snack or serve them as a side dish to soup or stew.
½ CUP (1 STICK) COLD UNSALTED BUTTER, CUT INTO SMALL PIECES, PLUS ADDITIONAL FOR PREPARING THE DUTCH OVEN
2 CUPS ALL-PURPOSE BAKING MIX (HERE), OR STORE-BOUGHT BISCUIT MIX
½ CUP MILK
1 CUP (ABOUT 4 OUNCES) SHREDDED SHARP CHEDDAR CHEESE
1 Lightly coat the Dutch oven with butter. Place the Dutch oven over a bed of 6 hot coals, cover the pot, and place 18 hot coals on the lid.
2 In a medium bowl, combine the baking mix with the butter and use your fingers to work it into the dry ingredients until the mixture resembles a coarse meal. Add the milk and cheese, and stir to mix well, until you have a thick dough. Add additional milk, if needed, to thin the dough or additional baking mix to thicken it.
3 Form the dough into 12 balls of roughly equal size and flatten each ball into a patty. Arrange the patties in the preheated Dutch oven in a single layer. Cover the Dutch oven (you should still have 18 hot coals on the lid) and bake for 20 to 25 minutes, rotating the pot by a quarter turn every few minutes, until the biscuits are golden brown on the outside. Serve warm.
Variation:
For extra flavor, add fresh or dried herbs, diced hot or mild chiles, crumbled bacon, or other flavorful ingredients along with the cheese.
